While that damn Dionysus was taking all the glory, Simcoe, Greek God of Beer and Relaxation, was out, diligently developing tools for man to brew- fresh grain and hops, active yeast, and bountiful water. With its golden glow and sharp hop bite, our Imperial Single Hop IPA is a tribute to this lesser-known God (and as temple-worthy as its namesake).

Appearance - 4.5
Poured into a tulip glass. An inch of fluffy white head sits on top of a hazy golden orange liquid. The head retention is very good and it leaves considerable lacing.
Aroma - 3.5
The nose is predominately pine along with hints of citrus and caramel.
Mouthfeel - 4.0
The beer is medium to full in body and nicely carbonated. It has a creamy feel in the finish.
Taste - 4.0
It begins with some bready malts followed by traces of citrus and then a blast of pine. Right before the finish there is a grapefruit bitterness and some of the caramel malt. There is a small amount of alcohol that makes it's presence in the finish, but overall it's decently hidden for a 10% beer.
Overall - 4.0
This is a great beer. I love the number of breweries putting out single hop beers. Being a homebrewer it really helps emphasize what flavors each hop produces. I'm interested in trying the Centennial and any other single hop varieties that come out.
